Oatmeal Pancakes

IMG_8399.JPGThese pancakes are quick and easy on a busy morning. All Oatmeal is naturally gluten free but if you have a gluten intolerance make sure you purchase oats marked as gluten free which will insure they were not processed where wheat products are also processed.

You can make your own oat flour by blending oats in a blender or food processor until the consistency of flour.

Ingredients

  • 1 cup

  • 2 tbsp

    baking powder

    eggs
  • 1 tbsp

    1 tbsp
    cooking oil

In a small saucepan, or small bowl in microwave, heat the milk until hot. Stir in the quick cooking oats, cover, and let stand for 5 minutes.

In a medium mixing bowl combine oat flour, sugar, baking powder and salt. Add oat milk mixture.

Whisk together eggs and cooking oil. Add all at once to flour-oat mixture, stirring just until combined.

Cook on a hot griddle or pan, about 375°F/190°C until the top starts to look dry around the edges, turn over and cook until second side is golden brown. You can make them any size you want, small or large.
